Set the EGG for direct cooking without the convEGGtor at 400°F / 204°C with a cast iron grid in place.
Using wooden skewer the mango slices and grill for about 30 seconds on each side. Remove from heat to cool and chop into small pieces.
In a highball glass, add the mango chunks to the bottom and pour simple syrup over the fruit.
Muddle until the mango breaks down. Add a few mint leaves on top. Lightly muddle with just a few twists to release flavour.
Pour in white rum and add a few ice cubes. Use the bar spoon to stir the mixture to chill.
Top with the chilled club soda. Gently stir again to combine. Garnish with a sprig of fresh mint and lime. Enjoy!
