Simple Beef Sliders - Big Green Egg

A simple recipe for juicy beef sliders with a smoky, spiced kick, grilled to perfection on the Big Green Egg. Topped with melted cheese, tangy pickles, and rich tomato relish, these sliders are perfect for any barbecue or gathering.

Ingredients

For the Burger Patties

1 kg lean beef mince

2 eggs

½ cup nutritional yeast

½ cup almond meal

2 tbsp Italian herbs

2 tsp onion powder

2 tsp garlic powder

3 tsp smoked paprika

Salt and pepper, to season

For the Burger Seasoning

½ tsp cayenne pepper

½ tsp Cajun spice

½ tsp smoked paprika

For Assembly and Toppings

Brioche burger buns

Bread and butter pickles

Tomato relish

Mustard

Sliced cheese

Method

Prepare the Patties

In a large mixing bowl, combine the beef mince, eggs, nutritional yeast, almond meal, Italian herbs, onion powder, garlic powder, smoked paprika, salt, and pepper. Mix until well combined.

Take a small handful of the mixture, roll it into a ball, and flatten into a patty about the size of your palm. Place each patty on a lined baking tray.

Sprinkle the tops of the patties with the burger seasoning (cayenne pepper, Cajun spice, and smoked paprika). Set aside.

Set Up the Big Green Egg

Pile the coals into a mound inside the Big Green Egg. Place 1–2 firelighters at the top, light them, and allow the coals to catch and burn.

Once the coals are glowing, place the wire grill in position for direct cooking.

Open both the top and bottom vents fully, close the lid, and let the Egg heat to 180°C (350°F).

Grill the Burgers

Once the Egg reaches 180°C (350°F), place the burger patties on the grill.

Cook for 3–4 minutes per side, or until cooked through.

Add Cheese and Toast the Buns

Once the burgers are cooked, top each patty with a slice of cheese and let it melt slightly.

While the cheese melts, place the brioche buns on the grill for a few seconds until lightly toasted with grill marks.

Assemble and Serve

Remove the patties and buns from the grill.

Assemble the sliders: spread a layer of tomato relish on the bun base, add bread and butter pickles, place the burger patty with melted cheese, add a squirt of mustard, and top with the bun lid.

Serve immediately and enjoy!
