Three common questions we get asked by new Egg owners.
Read FAQsDo I need to “cure” or season my new Egg before I cook on it?
No! Your Egg is ready to cook the minute it’s assembled. The ceramics were already fired at over 1,000 °C in the factory. If you want to burn off any factory dust or shipping residue, just do one quick high-heat fire (500–600 °F / 260–315 °C) for 30–60 minutes — totally optional.
How much lump charcoal do I actually put in for the first cook?
Fill to some level below the air holes in the firebox (about ⅔ up the fire ring on a Large). You’ll have way too much and that’s perfect — leftovers get reused next time.
Which vent does what?
Bottom vent or Draft Door = accelerator pedal (big changes).
Top vent or rEGGulator = fine-tuning.
Set the bottom vent first, then creep the top to dial in the last 10–25°C.
Do I cook with the lid open or closed?
If you’re cooking longer than 3–4 minutes → lid down the entire time. That’s the single biggest rule that makes a Big Green Egg different (and better) than a regular bbq.
If you’re just flashing a final sear → open the lid for the last minute.
