" Since we were away for racing for 45 of 52 weekends a year, we were always eating out of home or in the car whilst travelling. When I was younger, it was home cooked meals through the week, and prepping snacks for track days to avoid the canteen and takeaway when possible. My mum became quite synonymous for bringing treats to the track - she is world-famous for her rocky-road! The smell of a home cooked meal was the best. A Sunday roast although rare, was my favourite.
As a kid, I remember coming home from school and mum would have made delicious and fresh Cornish pasties - you could smell them before you walked in the door! The nostalgia is hard to beat. Nowadays we have Pizzas cooked on the Big Green Egg. As I am away most weekends, we make a big effort and have friends over whenever I am at home. The Big Green Egg is a central part of entertaining at home. Everyone gathers around the EGG and is included in the conversation and the meal creation!"

Perhaps not a meal precisely, but a feeling of safety and home - that’s what I’d like to create and enjoy, and for my kids to remember.
Can you describe a typical Coulthard family meal at your home?
For our Big Green Egg cook-ups, the kids love making Pizza’s and having full authority of their own creation. We encourage them to try new foods and add more than just cheese to their culinary palette..
What do you love most about cooking with the Big Green Egg?
I love cooking over the flavoured charcoal - something has to be said about the absolute tenderness of the meat as well as the infused flavours. My latest cook was a smoked pulled pork with the Hickory charcoal and a couple of pieces of Apple wood, It was a big hit!
What is a fun fact about you that few people know?
After so many years of travel, I have learned that a good night’s sleep is critical for my performance and mood, so I take my own pillow everywhere. It comes on every work trip, holiday and overnight stay. It is the best reward at the end of a long day.
If you could cook a meal for any person, living or dead, who would it be and what would you cook?
My childhood hero was always Ayrton Senna. Oh the stories he could tell. I think he’d enjoy one of my Big Green Egg home cooked Pizzas too.
